I didn’t think I liked sweet potatoes for so long. It turns out I love sweet potatoes and hate marshmallows. These days, stuffed sweet potatoes are one of my go-to dinner solutions. Especially on a cold night when you want to stay home rather than go out for dinner. They are delightful, filling, and easy to prepare. Sweet potatoes also serve as a canvas for anything you want. Mexican atmosphere? Fill with black beans and cumin cabbage. Miss Greek food? Fill it with quinoa tabulae!

I’m sharing my 4 favorite stuffed sweet potato fillings below. All recipes for stuffed sweet potatoes are simple and full of flavor. Unlike regular baked potatoes, you do not need to wrap the sweet potatoes in foil. Foil-free baking creates a plump skin, and the baked sweet potato caramelizes on the edges for more flavor.

Baking time for sweet potatoes varies depending on the size of the potato, so please check it for about 40-50 minutes. Poke it easily with a fork and you’re done.

Baked sweet potatoes can be stored in the refrigerator for up to 3 days, so you can do this step ahead of time. Then, when it’s time to eat, just fill the stuffing and stuff the potatoes!

Sweet Potato Quinoa Bowl Recipe

1. Greek Sweet Potatoes These sweet potatoes are Jack’s favorite (we ate a lot of sweet potatoes this week). My inspiration for this is (loosely) Greek salads. Make a spicy herbal quinoa salad with red onion, dill and lemon and finish with a drizzle of chachiki sauce.

2. Sweet Potato Burrito This is my favorite sweet potato fillet recipe. Mix black beans with chili powder, grated cabbage, olive oil and lime juice. Topped with a loaf of salsa and what I call “quick guak,” the fastest way to make guacamole. Just add some lime and salt to the avocado and mash it with a fork. Put it on top of the potatoes and enjoy!

3. Stuffed Sweet Potato Curry While the sweet potatoes are baking, this recipe sautés chickpeas. I prefer to bake whole cans. Because even if we don’t use a lot of stuffed sweet potatoes, it’s a great snack for later. You can also use fresh, pre-cooked chickpeas. This recipe contains yogurt sauce similar to the recipe number. 1, but mix turmeric instead of herbs.

One of my favorite fall salads is the Shredded Brussels Sprout Salad with radishes, apples, cranberries, feta and a really bright apple cider vinaigrette. Here, I took that lettuce and put it in the potatoes. Keep that in mind when you plan to use your leftover T-Giving next month!

When the air is cool in the fall, I want to eat two things. A bowl of soup and roasted sweet potatoes. Both are warm, comfortable and healthy. But while making butternut squash soup may be one of my favorite Sunday activities, baked sweet potatoes are my favorite thing to do during the week. It is very easy to make because the oven does 95% of the work. While they bake, you can do whatever you want! Prepare the leftovers for a meal, wrap up the day, or just spend time with family and friends. Then take it out of the oven, fill it up to your liking, and enjoy a delicious roasted sweet potato dinner!

Spiral Sweet Potato Bake

The most important thing about this is that it is not wrapped in foil. This will keep the sweet potato flesh ripening, but the skin will be very moist and almost dull. To get a soft, fluffy crispy crust and caramel on the outside of each baked potato, place it on a bare baking sheet!

If you are in a hurry, you can bake half of the sweet potato for about 30 minutes. Cut the potatoes in half lengthwise, drizzle with olive oil, sprinkle with salt and pepper and cook cut side up until lightly browned and soft.

Of course, the perfect baked sweet potato with butter, salt, pepper and chives is great too, but the options for baked sweet potato recipes don’t end there.
