I had some smoked sausage that I wanted to use up so I decided to make a meal similar to what I saw.

They all used canned tomatoes – I have them; I use them; But I’m not a big fan. I love fresh and I have a nice tub of grape tomatoes that I bought. Perfect!

I had a craving for something Mexican but I didn’t want canned tomatoes or the Rotel variety because I didn’t want green chilies. I really like jalapenos. Yes, it does make it a bit spicy, so if you’re a bit squeamish about heat, leave them out or substitute green peppers! It will taste good. The only thing it will lack is the heat.

Any kind of cheese will do here. I used jack cheese because I had about 4 oz. Block I opened. The Jackfruit cheese is creamy so it adds to the already creaminess of the sauce. But if you don’t have that, cheddar will do just fine!

If you are really in a hurry, for the last step, put the sliced ​​cheese on top and cover the pan – it will melt well. As suggested in one of the many recipes I looked at, I like to put it under the broiler. I recommend doing this because it added a little turbulence and looks better.

We also use smoked sausage, so all it really takes is heating the skillet. Meanwhile, it is full of flavor thanks to the spices. I like to use turkey sausage because it keeps this dish on the heartier side, but use any smoked sausage and you’re in business for a 20 minute meal.

What makes smoked sausage so special? It is the only sausage that is (usually) already cooked, so it only needs a few minutes to heat up. Breakfast sausage, Italian sausage links, brats, chorizo, and many other sausages are sold raw and therefore require additional cooking time before being added to the skillet.
