This marinade combines the flavors of two cuisines to make it completely out of this world. We finally got a grill for our balcony, so we’ve been pretty obsessed with cooking EVERYTHING. Skewers, grilled vegetables, grilled chicken, steak, peaches, pizza… EVERYTHING. This is our grid. It doesn’t take up much space, but it has a large enough grill surface that it’s not a pain to use. And the folding wings are also very useful for an extra surface to place all your kitchen stuff. I regret not getting a grill as soon as we moved into this apartment. So I decided it was time to share my secret chicken marinade that I’ve been using for YEARS with the world. It makes grilled chicken breast tastier and more tender. I use this marinade for both grilled and pan-fried chicken, and it turns out great no matter how you cook the chicken. Are you ready for this?? Related Recipe: Grilled Balsamic Greens Salad What Makes This The BEST Chicken Marinade The reason this marinade will set your taste buds ablaze is the combination of two truly delicious flavor profiles: a marinade of Asian style and an Italian/European style marinade. Soy sauce, ginger, garlic and sriracha are typical ingredients in Asian cuisine and make an amazing marinade on their own. Worcestershire sauce, Dijon mustard and balsamic vinegar are more Italian/European and make a great marinade on their own. Combine it all?? OH MY GOODNESS. You get a complex combination of flavors that taste so good, even though you don’t know exactly what the secret ingredient is. Trust me. You have to try this marinade. This chicken marinade looks like a lot of ingredients, but it’s really quick to put together. You don’t have to measure everything exactly, just draw it if you feel comfortable. If you decide to measure ingredients, use the same measuring spoon for most ingredients to save time and minimize dirty dishes. (Marinating chicken is never pretty…but it looks like it. It’s okay if the chicken isn’t completely submerged, you’ll end up ruining half the marinade anyway.) I’d say the main ingredients in this marinade are: lemon. juice, olive oil, garlic, honey (or brown sugar), balsamic vinegar, soy sauce and salt. If you’re short on time or don’t have other ingredients, make a quick marinade using just these ingredients. The tartness of the lemon juice and balsamic vinegar makes the chicken tender, the soy sauce and garlic give it plenty of flavor, and the honey/sugar adds an indefinable sweetness that helps the chicken brown nicely Grilled. But if you have a few extra minutes, Worcestershire sauce, Dijon mustard, fresh ginger, and some red pepper flakes or sriracha really add a lot of flavor and a little kick to this marinade. I skipped the Worcestershire sauce when I was cooking longer and eventually backtracked. I mean, it’s only a few bucks, but it adds a lot of flavor and lasts a long time. So it’s worth it. If you want Worcestershire sauce, buy a quality sauce that has a lot of flavor (like this one) instead of a cheaper version that adds colors and corn syrup for flavor. Use a micro grater or peeler to grate the garlic and fresh ginger. This recipe *NEEDS* fresh garlic and ginger. It’s MUCH faster and easier than using a large grater or trying to cut it by hand. I always grate the ginger first and then the garlic. This is because the ginger sticks to the grater a bit and grating the garlic helps to get it out. Related Recipe: Honey Rum Chicken Marinade How to Cook a Whole Chicken Breast I’m always hesitant to give grilling instructions because they really vary based on the thickness of the meat and how well the grill retains heat. , and it seems to work. We always end up with a tender and juicy chicken, even if we reheat it the next day, so we do something right: let the chicken breast marinate in the fridge for 30 minutes – 4 hours. Stir halfway through. 15 minutes before grilling, take it out of the fridge and let it rest at room temperature. Preheat grill to hot (minimum 300-350F). Place the “good” chicken breast side down on the grill and immediately close the grill lid. I don’t dry it out, I like to leave the marinade juices for the chicken. Grill for 8-10 minutes. Don’t check it! Carefully open the grill and turn the chicken over (now remove the “dirty” chicken tongs). Cover and continue grilling for 7-8 minutes or until center registers 165. Use clean tongs to transfer chicken from grill to a clean plate and let rest 5 minutes before slicing. Using this marinade for chicken skewers or grilled vegetables This marinade would also be great for chicken and vegetable skewers. Simply marinate the shredded chicken breast and chopped vegetables (zucchini, bell pepper, red onion, mushrooms) in this marinade and then assemble the skewers. If you are making more than a few skewers, you may need to double the marinade recipe. Your skewers will also cook faster than whole chicken breasts, so don’t overcook them and dry out the chicken. If you are thinking of using this marinade on grilled vegetables…it will work, but it is not my choice of vegetable. It will obviously add great flavor to your veggies, you can’t go wrong. But since vegetables don’t absorb as much flavor as chicken (or other meat), you’re really overdoing it with this marinade. I find that a simple combination of grated garlic, lemon juice + olive oil, Italian seasoning, and salt is enough to give the vegetables a lot of flavor and stick to the vegetables better.
