This is possibly the best (and ironically, the easiest) varnish I have ever made. But as simple as the recipe is, there are three steps that can make or break the dish.

The first is to dry the surface of the fish. Place between piles of paper towels and squeeze lightly to squeeze out excess moisture. If you don’t, when the fish hits the hot pan, the excess moisture will turn to steam, preventing the surface from burning.
The second is spices. Don’t rely on the sauce alone to flavor the fish. Rub the fish liberally with salt and pepper, then let it sit for at least half an hour to soak up the spices. Salt draws out more moisture, so it’s a good idea to press the fish between stacks of paper towels again before you start cooking.
Brown the salmon fillet on all sides. And sear means sear, and don’t cook the fish to dryness. You want every inch of the surface to be browned, but the fish should be moist and just cooked through inside.
Note that my fillet was about two inches at the thickest part. The actual grilling time will vary depending on the size and thickness of the fillet. As a guide, keep the heat high to sear the fish, but leave it still moist in the center. The fish is finished cooking on residual heat after it has been removed from the pan.

All the herbs – Don’t worry too much if you don’t have the “right” herbs. Any combination of 3-4 herbs (or even 1-2 if that’s all you have) is great. Trust me on this, you can combine herbs in all kinds of groups and this salmon with garlic will taste delicious.
Lemon – Lemon and salmon go together like salt and pepper, peanut butter and jelly, salt and chocolate… well, you know what I mean. I can’t have salmon without at least a little squeeze of lemon at the end. It makes the flavors so bright and slightly citrusy, which is exactly what you want in a grilled salmon in the summer (or any time of the year, really!).
Salmon is one of the healthiest sources of protein available. It is very healthy for you. This is because of the Omega-3 fatty acids it contains. It is very low in calories and saturated fat as well. Salmon also contains B12, potassium, niacin, riboflavin, thiamin, folic acid. iron and vitamin D.

The short answer is, yes you can eat salmon raw, but I would only do it at a nice Japanese or sushi restaurant where they get sushi fish and can ensure the safety of the raw fish you eat.
Baked Lemon Pepper Salmon
If you buy salmon from the meat counter or buy it frozen and thawed, it is not a good idea to eat the salmon raw, as you cannot be sure that it has not been thawed and refrozen before, or if it was not. sit at the ideal temperature etc.

I almost always thaw salmon in the fridge, which takes about 24 hours. If you don’t have that kind of time, you can also thaw salmon in cold water. Not hot water! It will begin to cook the salmon. Cold water will thaw the salmon nicely within a few hours. Change the water if you feel it is necessary.
A final option is to thaw it in the microwave. Do this with the correct defrost setting and check that it is fully defrosted often. Thawing in the microwave can be problematic as it tends to cook some of the salmon (or whatever you’re thawing) and can make it a bit tough.
