Recipes For Dinner Rolls Without Yeast – No mixer, no twist, no special tools. These No Knead Dinner Rolls are soft and fluffy and not difficult to make. Just mix the ingredients in a bowl, and mix with a wooden spoon – that’s it! This is the easiest bread recipe in the world!
Every time I make these, I am amazed at how many they are, and how wonderful they are. They are great in any way, like a regular dinner roll, made by kneading the dough by hand (tired!) or using a stand mixer.

I truly believe that only those with a refined palette and/or baking skills can tell the difference between these No Knead Dinner Rolls and the usual boring dinner rolls!
No Yeast Dinner Rolls (super Easy!)
In the interest of being open and completely honest, here are the differences I see between Knead Wine Rolls and No Knead Dinner Rolls:
I’m a big believer in the merits of no-knead bread, but I’ve since come up with No-knead Artisan Bread and Focaccia – both amazing breads in their own right that don’t require a minute of kneading!
In terms of preparation, the dough is literally a dump job. There is a big difference in rising time compared to kneaded dough which can rise in 30 – 45 minutes for the first rise, and the same for the second rise after rolling. For these No Knead Dinner Rolls, the dough is
It is denser than water, so it takes longer to rise. 1.5-2 hours, depending on the temperature. If you use the funny but effective tip of raising the dough in the dryer (always! hot!), it takes 1.5 hours. 🙂 (See notes for details)
Homemade Dinner Rolls Recipe: How To Make Soft Yeast Rolls From Scratch
In these pictures you can see how the dough differs from the traditional dough. It cannot be removed, it is very sticky. It’s almost like a cake!
Quick tip: To get a nice golden shape, the dough needs to be rolled well and gently into a ball. With thick dough, it is difficult to do. So here’s what I do: Gently roll the dough, shape it like a money bag (mmm… Thai Money Bags…). Roll it out and you have a nice, smooth surface with a long dough = smooth golden surface. I also show it in the recipe video (below the recipe).
Another great benefit to these rolls: you can roll the dough into rolls, then refrigerate them overnight (uncooked) and bake them fresh when you’re ready to serve! It’s actually weird, I’m not sure it will work but it’s true.

Video recipe above. These fluffy dinner rolls are like magic! Just combine the ingredients in a bowl – no dough, no mixer, no special ingredients needed. These are soft, tender and moist, well salted with a sweet touch. It takes 2 hours 15+ minutes flight time.
Fluffy Homemade Dinner Rolls
1. Dry yeast 1 spoon = 9 grams. I use Lowan dry yeast (red bottle, sold in the Woolies/Coles bakery isle) which actually doesn’t need to be killed before use but there’s nothing wrong with doing it, and I do. because it is normal + because it is the same. The process applies to all dry yeasts.
If you are using a package, you can use only 2 x 7 g sachets, which is 4 1/2 tsp which is more than 1 teaspoon but works fine. The taste is not yeasty and it grows. Otherwise, measure 1 tablespoon.
To use fresh yeast (it comes in dry form, not powder like dry yeast), use 27g/0.9 oz. You don’t have to dissolve it in water like I do with the dry ones, but it’s okay to do this and put it in water and let it stand until it comes out, like using dry yeast.
2. Warm milk and hot water kill yeast. I heat the milk for 45 seconds on high in the microwave, and use hot water. The test is: put your finger in it. If it’s a shower, will it be fun? It’s good. Not too hot or too cold!
Momma’s Easy No Yeast Dinner Rolls
3. The bread is softer and a little softer if it is made with bread flour instead of regular flour (plain or all purpose). However, this recipe works well with regular white flour as well.
Cup sizes vary around the world. If you don’t have a scale to measure flour, use the correct cup size. For US/Canada, use 4 1/2 cups (they are slightly different, but close). For the rest of the world except Japan, use 4 cups of flour. For Japan, please measure the flour.
4. A warm place to make dough: This is what I do all year – use a dryer. Laugh – but try! Run the dryer for 1-2 minutes (on low) and place the plate inside. If you do this, the dough will rise in 1.5 hours. Even if it’s snowing outside!
5. SUGAR: This is not a sweet roll (I use 1/2 cup +) but it is sweet. 1/4 cup of sugar and 12 rolls = 1 tsp. You can reduce it to 2 teaspoons of sugar.
The Best Dinner Rolls
6 is not. DIRECTIONS: Follow the recipe until it is rolled into balls and covered with plastic. Refrigerate for 4 hours – 24 hours (this is the 2nd rise), take out 30 minutes before baking!
6b you. SERVING: As with all homemade bread, it is best the day it is made. Items made using this version of No-Knead do not retain their kneaded texture – they are more dry. For the next day, drying again changes everything to make them soft and tasty again – 15 seconds in the microwave! Mix these ingredients well, then just pour them in. The dough can be chilled but not risen (but still puffy). To reheat, I put them on a tray and cover with paper (so as not to make too much of a mess), then return to 160C/320F for about 8 minutes. Or cut it in half and bake it.
6c you. DIRECTIONS: fold the dough in a large bowl, then divide the dough into two bowls for the first rise (if the dough is doubled in the large bowl, it may be difficult to rise). Continue the recipe and put the rolls on a large baking sheet or 2 baking, and take them all on one shelf in the oven.
6 d. High humidity (e.g. Southeast Asia) can cause the dough to stick after the first rise and make it difficult to form into balls. Just sprinkle flour freely with a cloth as a board, cut, roll into a ball – do not knock the dough, but use it on top for control purposes only. The dough is more sticky than regular dough, so my technique in the video for making the rolls is to minimize contact with the sticky dough.

7. SOURCE: This recipe is adapted from a yeast-free bread recipe I’ve found over the years. I may have first seen her in Martha Stewart or the New York Times. The recipe has been updated and I now consider this version “my”! 🙂
8. GREAT: Many readers have now reported that this recipe works well! Also, different daily reports seem to be very dry or made with more flour than the one shown in the video. They also worked well, they showed that they are very forgiving.
9. GLUTEN FREE: This also works with gluten free flour, although the rolls are not as thin as usual when replacing GF. However, they are still very soft! I’m sure you’ll be surprised how these turn out!
