I will teach you how to make homemade buns. These are the best homemade dinners I’ve ever had and it all starts with a simple 7-ingredient dough. I make these scones whenever I get a chance and have even taken a pan to friends of ours who just welcomed a baby. They are pillowy soft with the most delicious flaky and buttery texture. Each will require you to bake them on repeat.

As shown in the video tutorial, the dough is collected with a mixer. You can use a paddle attachment or a dough hook. You can also make the dough by hand, but this requires some arm muscle. Once the dough comes together in the mixing bowl, it’s time to knead. You can just continue to beat the dough with the mixer for this step or you can knead the dough by hand. I chose to knead the dough by hand so you can see me doing it.

The firmer and chewier the bread, the less fat there is in the dough. This is known as lean dough. The softer and richer the bread, the more fat there is in the dough. This is known as rich dough. Unlike chewy homemade pretzels, focaccia, and my artisan bread, soft dinner rolls require a rich dough. Unfortunately, that doesn’t mean the money is rolling in. Rather, “rich” correlates with the amount of fat. For example, this dough has milk, butter and egg.

You need a total of 7 ingredients. They are the same ingredients in my Easy Cinnamon Rolls, which are also a rich dough. (Although I use more sugar for sweeter cinnamon rolls, of course.)

Then press down the risen dough. Shape into balls and place in a baking tray. Don’t worry if they aren’t all the same size.

No Yeast Dinner Rolls Quick And Easy

You can form this dough in many different ways, including twisted buns, knotted buns (like I make garlic knots), sticky buns, or even hot dog buns. Let’s stick to the basic round shape. Divide the dough into 14-16 pieces. Take a toothpick and stretch the top of the dough while pinching and sealing the bottom. I do this all by myself and you can watch it in the video tutorial above. Make sure the rolls are smooth on top and sealed on the bottom. I form hot cross tracks the same way.

The buns take about 3 hours to rise. Not everyone has 3 hours to spare, so let’s discuss another option! Prepare the dough, let it rise and shape the buns. Cover the well-shaped rolls and put them in the refrigerator for about 16 hours. At least 3 hours before you need them the next day, take the rolls out of the fridge and let rise on the counter for about 1-2 hours before baking.

And here’s how to freeze dinner rolls: Follow the make-ahead instructions and instead of refrigerating overnight, freeze the rolls in a baking dish. Once frozen, they will no longer stick together and you can place them in a freezer bag. Let them open and rise for about 4-5 hours, then bake. You can also freeze the baked rolls for dinner. Therefore, if you want a smaller batch, you can make the entire recipe and bake just a few fresh rolls at a time.

These preparation options are especially useful if you want freshly baked rolls for Easter lunch, Thanksgiving dinner or Christmas.

This dough is not ideal for a large loaf. Instead, I recommend using a leaner dough, like my sandwich bread recipe. And if you like pizza, try these pull apart pizza rolls!

My last piece of advice? Don’t limit these rolls to dinner. They are welcome anywhere, with any meal, at any time of the day. Use to top sliders, breakfast sandwiches, your favorite tomato sauce, along with a salad, or dip into a bowl of creamy chicken noodle soup. I’m always looking for ways to make your bread baking as easy as possible! I realized that I still have a quick recipe for making rolls. Any dinner, casual or gourmet, will be so much better with this simple recipe.

Fluffy Homemade Dinner Rolls

I usually use regular active dry yeast for my dinner, but this time I used instant yeast, which means you don’t have to activate the yeast in hot water, you just add it in with the rest of the ingredients. The other change I made is that I drastically reduced the rise time. Usually, when making bread or rolls, two rises are necessary. This time I only have a short increase of 10 minutes. Using this method, your rising time is greatly reduced while still producing lovely, fluffy rolls.

The ability of your dough to rise comes entirely from the yeast. There are several factors that can cause your yeast to not work properly:

This is another time your environment comes into play! If you live in a humid place, you may need a little more flour to get the same result as someone who lives in a dry climate. If you need to add a little more flour than I used to get the right dough, that’s totally fine. Add a little at a time until the dough is soft and elastic.

If your dough has risen but the breadcrumbs taste tough or just aren’t as soft as you expected, it’s because there’s too much flour. It’s best to start with 3 cups of flour and add a tablespoon or two at a time until the dough pulls away from the sides of the bowl.

You have noticed that the dough does not rise much, this is a problem with the yeast. See the “My Dough Won’t Rise” section for more information.

Allow your dinner rolls to cool completely to room temperature before storing to prevent them from getting soggy. Transfer the scones to a large freezer bag, bread box, airtight container, or even a domed cookie sheet to keep them fresh.

These quick-meal buns will last up to 5 days at room temperature or 9 days in the refrigerator. You can warm them up in the microwave for a few seconds before serving if you like.

After forming the rolls and placing them in the baking dish, cover it well with plastic wrap and foil. Transfer the dish to the refrigerator and bake within 1 month.

To bake, let the rolls rise at room temperature for 1-2 hours, covered with a clean kitchen towel. After they have risen and puffed, bake according to the instructions in the recipe.

Make sure these quick dinner rolls are completely cooled to room temperature before you put them in the fridge. Place the rolls on a baking sheet and cover with plastic wrap. Freeze them for 1-2 hours, then transfer them to a large freezer bag or airtight container. This process allows you to grab multiple rolls when you need them without worrying about them freezing together.

You can leave the rolls completely uncovered at room temperature. For a faster method, microwave them for 5-10 seconds at a time until heated to your liking.
