A restaurant near us added a Mexican-style cocktail to the menu, and luckily I had the courage to order it. The sweet drink made an impression on me. The concept is so simple and obvious that I couldn’t believe I hadn’t thought of doing it sooner.
Perfect Shrimp Cocktail
This recipe is my version of coctel de camarones, also known as Mexican shrimp cocktail, and it’s just what you can use for your next summer dig. Freshly made pico de gallo is mixed with cocktail sauce and garnished with avocado slices and cilantro for a flavor combination worth craving. Serve this fresh summer shrimp cocktail with a Mexican twist with a big bowl of tortilla chips for dipping and wash it all down with a cold Mexican beer or bubbly ranch water.
Most of the preparation for this Mexican Shrimp Cocktail recipe can be done a few hours before the meeting. After mixing the pico de gallo and cocktail sauce, cover the bowl with plastic wrap and refrigerate until ready to serve. Save the cooked shrimp and avocado and add them just before serving to keep them freshest.
Coctel de camarones are usually served with saltine crackers, but I think it’s fun to make them with hard tortilla chips.
An easy and hassle-free way to serve a large group is Mexican shrimp cocktail in one serving bowl next to a large bowl of tortilla chips or a plate of pretzels. When ready to serve, slice the avocados and squeeze lime juice over them to prevent browning. Garnish the top of the shrimp cocktail with avocado, some cilantro and a few pieces of shrimp.
How To Boil Shrimp For Shrimp Cocktail
For a house party, use margarita or martini glasses with appetizer forks. For summer cooking, disposable plastic cups with plastic cocktail forks are a great choice and cleanup is a breeze! Place a spoonful of the shrimp cocktail mixture in the bottom of each glass. Add a generous layer of avocado and fill the glasses to the top with shrimp cocktail. Add a small avocado, cilantro and a piece or two of shrimp.

Shrimp cocktail may be retro, but when done right, this party favor never goes out of style. Adapted from Bon Appetit, this classic version boasts big, plump, perfectly cooked shrimp with a lemon horseradish cocktail sauce. It is very easy to prepare and rivals the shrimp cocktail served in the best restaurants and steakhouses. The key is to use jumbo shell-on shrimp and be careful not to overcook them. Before you start cooking, you want to have a timer and an ice bath ready; shrimp cook in 3-1/2 minutes and must be plunged into cold water immediately after poaching to stop the cooking process.
Homemade Cocktail Sauce ⋆ Real Housemoms
As with all my shrimp recipes, I recommend buying frozen shrimp. Most shrimp are cleaned and frozen shortly after being caught. Unless you live on the coast, the “fresh” shrimp you see at a seafood stand are usually frozen and thawed shrimp. Who knows how long it will last there, so it’s best to buy ice and make it yourself.
Shrimps have a black vein running down their back, which needs to be removed. It’s tedious to make your own, so look for shrimp labeled “peeled and gutted.” (If you need to do this yourself, use kitchen shears to cut the shell off the back of the shrimp, from head to tail, then use a small paring knife to remove the vein.)
Finally, make sure you buy raw shrimp instead of precooked. This may sound obvious, but it’s a very common mistake and cooking shrimp twice will result in very tough shrimp.
Combine salt, sugar, and 6 cups water in a medium saucepan. Bring to a boil over medium heat. Fill a large bowl with ice and cold water and set it next to the sink.
Spiced Prawn Cocktail
Cook 3-1/2 minutes until shrimp are pink and opaque. The cooking time is specific to 16-20 jumbo shrimp (“16-20” refers to the number/diameter of the shrimp, which is the size you get per pound). If using different sized shrimp, follow these directions: 26-30 cook 1-1/2 minutes; at 21-25, poach for 2 minutes; 13-15 minutes, use 4 minutes.
Remove the shrimp from the colander and quickly plunge them into ice water to shock them and stop the cooking process. Leave to cool, about 15 minutes.
Meanwhile, make the sauce: In a small bowl, combine the ketchup, horseradish, lemon zest and juice, Worcestershire sauce, and hot sauce. Taste and season as needed.
Clean the shrimp, leaving only the tails. Transfer to a bowl filled with crushed ice, if using, and serve with cocktail sauce.
