When I discovered these muffins, my reality couldn’t have been more different. I’ve been sitting in a cool house in Bristol where the summer has dragged her feet so much that we had to turn on the heat for two evenings (late May) and these looked perfect!

* These are the three flours I tried and they all gave a wonderful end result. If you are gluten-free and want to use buckwheat flour, be sure to use a brand that is certified gluten-free, otherwise there may be traces of gluten due to factory cross-contamination.
The Best Vegan Banana Chocolate Chip Muffins
* Banana: This is a small cup of banana puree (1 cup of banana = 225g). This recipe is created using fresh, ripe bananas. Actually, these muffins come from Sally’s baking addiction, and because they contain yogurt and milk, they’re already very moist and tender. I skipped the egg and used all-purpose flour to keep them soft (wholemeal can also be used, but it’s a bit thicker). Chocolate chips…required!

The muffins are sweetened with banana, a little honey and a little brown sugar. I find that using just honey as a sweetener works, but the end result is a little heavier, which isn’t a bad thing. So if you want to keep them sugar free, feel free! Leave out the chocolate chips, then obviously 🙂

* I often get questions about replacing sugar with honey or another natural sweetener. For this recipe, you can do it, but remember that sugar not only adds flavor, but also a smooth texture. Using only honey will result in slightly denser muffins.
* If you prefer, you can substitute 3/4 cup of all-purpose flour for whole wheat flour. I don’t recommend making these muffins completely whole, as they can be a little dry without oil or butter.

I wanted to make some banana nut muffins, but since my daughter doesn’t like nuts, I went ahead and added chocolate chips.
In her opinion they are very good and I am sure many of you will agree. Who doesn’t love some chocolate in banana muffins!
Eggless Banana Bread Recipe
Healthy. This muffin recipe is based on my Egg and Dairy Free Vegan Banana Bread. I cut back on the oil a little, using only 1/4 cup, making them a little healthier. They came out perfectly soft and fluffy and the sticky chocolate chips were a welcome addition.
Fast + easy to make. These muffins are super simple and ready in no time using overripe bananas and a few pantry ingredients.
Great for a snack. These vegan muffins are great for breakfast or a healthy snack throughout the day. They are quick to eat around our house and I’m sure you will love them too!

Moist & Fluffy Vegan Banana Bread Recipe (gluten Free!)

Made with lots of love and a sprinkle of chocolate chips, these vegan and banana chocolate chip muffins are the perfect way to start your morning or enjoy them as an afternoon snack!
Dry ingredients: Combine flour, baking powder, baking soda and salt in a medium/large bowl and set aside.
Mix: Add the wet ingredients and bananas to the batter and mix. If the mixture seems too dry, add some non-dairy milk, maybe 1/4 – 1/2 cup max (I never need to add).
Vegan Banana Muffins
Fill the muffin tin: Pour into a well-greased or paper-lined muffin tin, filling each muffin about 2/3 – 3/4 full.
Bake: Place in the oven, on the center rack, and cook for about 20 – 25 minutes. You can also do a toothpick test in the center of the muffin, if it comes out clean it is ready.
Storage: Once completely cooled, store the muffins in an airtight container covered with a paper towel on the counter for up to 3-4 days. The paper towel will absorb the moisture and keep them from getting too moist. Or refrigerate for up to a week.
I made them using 2 teaspoons of baking powder with great results. If you don’t have baking soda on hand, you can leave it out.

Spelled flour is my favorite flour and I use it exclusively for my baking projects! If you are slightly gluten intolerant, you can use gluten flour without any ill effects.
