A few months ago, I hosted a dinner party in Los Angeles. The night was hot. It is actually hotter than hot. Total heat. The air was thick and smoky. The mountain was literally on fire. Dust fell on the dining table. It was unbearable, but my guests came anyway. I started the meal with this creamy caramelized onion and fennel soup.

I have a habit of starting all my meals with soup. Soup is nourishing and comforting to us. It releases good emotions and relaxes the guests. For this meal, this time, I served the soup cold because the weather really left me with no choice. I topped it with an heirloom tomato salad and it brought the flavors of August together perfectly.

To make a soup big enough for four people, you need a lot of onions. For this recipe, you’ll need three pounds of onions, preferably diced classic yellow onions. For other ingredients, you’ll need unsalted butter, dried rosemary, dried thyme, dried oregano, chicken stock, heavy cream, and fresh chives for garnish.

When it comes to the hardware required for this recipe, it’s pretty straightforward. To make the soup, you will need a knife and cutting board, a large pot, a wooden spoon or silicone spatula, and an immersion blender. If you don’t have one of these (sometimes called a hand blender), you can use a regular blender (although we really recommend using an immersion blender whenever possible). If you go that route, make sure to handle the hot soup in small batches and make sure the lid is on tightly for your own safety.

Like many recipes, it starts with cooking the onions. Well, technically it starts with chopping the onion, but you’ve already done that, right? Now, melt the butter in a large saucepan over medium heat. Once melted, add chopped onion.

Stir every minute or so to make sure the onions cook evenly and don’t burn. Cook the onions until soft, translucent and very fragrant, about 10 minutes. If you see them browning and caramelizing, lower the heat and stir twice, as too much browning will negatively affect the soup’s flavor. Caramelized onions definitely have their place, but not anymore.

Once the onions are fully cooked, add the rosemary, thyme, oregano and chicken stock. Stir everything well and continue to simmer the soup for 15 minutes.

Now remove the pot from the heat and use an immersion blender to blend the soup until smooth. You can also work in batches with a regular blender, just be careful not to spill the hot soup on yourself. Next, add the heavy cream and beat well. You can also use a blender to blend everything. That’s it, spoon into the bowl and top with fresh chopped chives.

Any soup left? No problem. “It keeps in an airtight container in the refrigerator for up to five days,” says Carly, and “reheats well in the microwave. Give it a good stir [before reheating].”
