Every time I make white chicken enchiladas, I’m either going to a party (with them), eating late at night, or I’m too busy to stop and take pictures of the food to post.

Easy Chicken Enchiladas Recipe
I love going to Mexican restaurants. The food and atmosphere are fun, the drinks are good, and I love the chips and salsa!
I usually order the white chicken enchiladas or the chicken chimichangas and I have to say this white chicken enchilada is better than any I’ve ever had. They are moist and full of flavor. And still good leftovers!

If you want to cook the tortillas before filling (which I don’t because I like a simple chicken enchilada casserole), you can heat a pan with a little oil and “kiss the pan” each tortilla for a few seconds. Also, be careful not to overcook them.

*You can cook the chicken in this recipe in several ways. You can roast some chicken breast in the oven. Drizzle them with a little olive oil, season with salt and pepper and bake for about 35-45 minutes.
*It just depends on how long you cook and how you like your chicken to taste. Baked chicken and fried chicken will give you the best taste.

Definitely! Corn tortillas must be heated individually before rolling or they will tear during rolling. Keep this in mind.
Keto White Chicken Enchiladas (low Carb)
Preheat the oven to 350 degrees F. Spray a 9×13 pan with nonstick cooking spray. Add 1 cup grated cheese. Season with salt, pepper and a little seasoning.
Melt the butter in a medium saucepan. Stir in the flour and cook for 1 minute until thickened (do not burn).
Bake for about 20-25 minutes. If you like, you can turn the broiler to high and broil for a minute or two until the cheese is lightly browned and bubbly. Serve warm with your favorite side dishes.
