Now that there are children in the family, this soup is perfect for the whole family. You can always sneak vegetables like carrots, peas, mushrooms into this soup. But I prefer the classic way.

This Chicken Sweet Corn Soup is another quick recipe to whip up. If you use the Instant Pot, your effort is cut in half.

Chicken breasts are cooked with onions, ginger garlic and chicken broth for extra flavor. Creamed corn makes the soup creamy and rich.

Another key ingredient in this soup is eggs. When the egg is slowly added to the simmering broth, it forms ribbon-like structures that thicken the soup somewhat.

You can undoubtedly use frozen chicken breasts in this recipe. That’s the beauty of using an Instant Pot. Cooking frozen chicken breasts in the Instant Pot is super convenient. It is not necessary to defrost the chicken before cooking. Just adjust the cooking time according to the size of the chicken breasts. Cooking frozen chicken breasts releases more liquid than regular chicken, so reduce the amount of liquid in your recipe.

Before I got my Instant Pot, I used to cook this soup on the stove top. The whole process is the same as the Instant Pot. You will need to adjust the cooking time for the chicken breasts. Use a heavy bottom pot for the soup.

Chinese Corn Soup With Chicken

For those unfamiliar with it, chicken and sweetcorn soup is basically an egg drop soup made with extra chicken, corn, and vegetables. This simple soup is delicious and flavorful when lightly seasoned with my favorite broth and ginger, garlic and sesame oil. When it’s thickened with pretty egg ribbons and topped with a classic chicken stock topping? I’m sure this soup is just as comforting.

If you’re looking for fresh chicken soup for the season, or if you’re feeling the weather and need a warm, comforting meal, grab your Crock Pot (or Instant Pot) and let’s make some soup. Quickly set together. I think you’ll like it.

*As mentioned above, you can add precooked chicken (shredded or shredded) to the soup. Or you can add 1kg of raw boneless skinless chicken breast to the stock itself, cook until done, remove and shred, then add to the soup.

*If you’re making this soup in an Instant Pot, it’s super easy to just add some uncooked boneless skinless chicken breasts to the stock and use the rest to pressure cook. After a quick drain, remove the chicken and shred it, then return to the soup. Alternatively, you can add precooked shredded or shredded chicken to the beginning of the soup.
