Since Valentine’s Day is over (well, in a few hours) and St. Patricks is nearby,  I think I’ll be back for this clean, green, fresh and light soup. Truth be told, I was also looking for soup to cook, so I could fill my apartment fridge with ready-made reheatable food. I think this thick celery soup sounds delicious.

Keto Celery Soup

Yes, it’s celery cream soup, but don’t let the cream fool you because I kept it dairy-free. A can of delicious greasy coconut milk is to give thanks for that. But actually this celery soup is just a bunch of celery, leek and onion chopped and diced. Talk about cleaning the mouth and intestines.

But the best thing is – it’s very easy. Just sauté the chopped vegetables and garlic for 10 minutes, then add chicken or vegetable leaves to make the flavor more intense. If you have some fresh herbs on hand, throw them in. Once done, you can transfer the soup to a high-powered blender or use a hand blender to blend right in the pot. For soups like this, I usually choose the latter (because I’m a total clumsy person). Hand blenders also give you the option of how much to grind or puree you want.

With so much celery left over from making Kale & White Beans Lemon Soup with Leeks, Cabbage, Potato & White Bean Soup and Potato, Leeks & White Bean Soup, I set out to find a recipe. or to use up. And it happens to be another delicious vegan soup that uses a lot of what I already have on hand!

Who knew that fresh celery stalks could be made so delicious? This soup is amazing and full of nutrients that will make you oooh and oooh with every bite.

The ingredients for the creamy celery soup are small, easy to find, and friendly, making this the perfect vegan soup for an easy weeknight dinner or whenever you want a quick meal that can be prepared. in 30 minutes. Serve warm in winter and cold in summer!

That’s right, celery soup contains many healthy and nutritious foods. Usually celery soup contains cream and milk, but we’re going to make this dairy-free using vegan butter or an approved substitute and letting the potatoes become smoother as they are pureed. It’s low in fat, can be made without oil, and is delicious!

Stir-fry: Heat butter/oil/water over medium heat, add celery, leek/onion, potato, garlic and a pinch of salt, saute for 8-10 minutes, stirring frequently.
