A while back I shared a homemade brownie mix that is so good to have and the best made-from-scratch brownies are a reader favorite. They’re perfect for extra decadence when you need something for a special occasion.

Today’s recipe uses the same ingredients as the homemade brownie mix, except that those brownies are now written when you want them and not made ahead of time.

This recipe uses pantry staples. By stocking your home with the essentials for everyday baking, you’ll be ready when a chocolate brownie emergency arises.

A quick note about cocoa powder. I like using the dutch process because I think it has a richer, less pungent flavor similar to what you get in a box mix. It is also dark in color.

If you use regular cocoa powder, the picture below shows the brown color. Note that this recipe calls for unsweetened cocoa powder, not “dry hot chocolate cocoa mix” for baking.

Midnight Brownies (aka Dark Cocoa Powder Brownies)

Start by melting your butter in a large microwave-safe bowl. You can also use oil or replace half of the oil with butter. I love the flavor the butter gives, but the oil makes them a little soggy.

Then beat in the sugar and make sure the mixture cools down to almost room temperature. (You don’t want to scramble your eggs)

Add the room temperature eggs and vanilla. (Room temperature so they don’t curdle your butter again.) And beat well.

I recommend using a hand mixer here for a minute or two at most. Beating well at this stage will cause the cupcake crust to crack.

Add cocoa, flour, baking powder and soda and mix. Pour into a greased or parchment-lined 9 x 13-inch pan and bake at 350 F for 28 minutes or more. That Dr. Warm, homemade, juicy muffins.

You can also use this basic brownie recipe to make brownie bites. Pour brownie batter into greased mini muffin tins ½ full. Bake for about 12 minutes or until set.

Half of this recipe will fill an 8×8 inch pan. Bake for 24 minutes or until set.

Here are some of my other favorite cupcake recipes. These brownies are a little different than my chocolate brownies because they are made entirely with cocoa powder. The texture is also different. These cocoa powder brownies are darker in color and have a more intense chocolate flavor, and although both are equally moist and chewy, these brownies are slightly less dense than the chocolate brownies.

My definition of snacks are brownies that are firm and moist, with great chocolate flavor and not too sweet. However, I don’t like soggy brownies that look almost baked. To me, fudge brownies should be soft and moist, but not so moist that they look sticky and overcooked.

This cocoa powder brownie recipe I have is just that. It delivers dark and dense chocolate brownies with a very moist and dark texture, almost like a fluffy fudge treat.

If you notice, this recipe is completely cocoa powder based (hence the name Cocoa Powder Brownies). I used unsweetened Dutch processed cocoa powder for an intense cocoa flavor, and when combined with the brown sugar, the cupcakes had a delicious, intense chocolate flavor.

These cocoa powder cupcakes are super easy to make. No need for a mixer, everything can be mixed in one bowl.

You will notice that the cake batter will rise as it bakes. It’s definitely cool. Bake the brownie for 20 minutes. To check if the brownie is done, you can use a toothpick to check the edges of the brownie. Ideally, it should come out with moist crumbs and the sambar should still be soft in the middle. Cool the cupcakes in the pan for about 10 minutes. Carefully lift them up holding the parchment lining and transfer the cocoa powder onto a wire rack to cool completely.
