But don’t worry—I’ve got a few more fall recipes planned before the season disappears entirely.

Pumpkin Banana Bread (vegan)

First, I’m starting with this pumpkin banana bread. I know, I know… since it’s a new month, I had to start it off with a new cookie recipe. But baby Lucy threw a bit of a wrench in those plans, so here we are, right? We promise you won’t be disappointed!

Banana bread has always been my favorite – the taste, the texture, the smell – I love it all! But banana bread has been made many times. Now, I’ve had banana cake on my radar for a while, but I wanted an easy recipe that I could whip up between Lucy’s naps that went from two hours to just 40 minutes.

So this got me thinking…how can I make this banana bread fresh yet simple? Then I came across this incredible pumpkin banana bread recipe from Pioneer Woman and thought, “What a great idea!” Banana bread and pumpkin bread are known for being incredibly moist, and both flavors pair well with fall spices, so I knew the combination was irresistible.

If you’ve never made banana bread before, I bet you’ll be surprised at how easy it is. No fancy equipment, no complicated steps and simple ingredients. You don’t even need a stand mixer! Although I have, I never use banana bread. Why worry when you mess things up???

I thought: What if pumpkin bread and my favorite banana bread had a baby of their own?

Shown here with raisins – they’re delicious on their own – but if I’m being honest, those raisins are usually semi-sweet chocolate chips. Of course, this negates the whole “sugar free” aspect, but chocolate chip mixes are how we roll around here. even

With chocolate chips, this banana bread is still low in sugar compared to other banana bread recipes.

The key to making this low-sugar pumpkin bread is to sweeten it with plenty of bananas, not refined sugar. As bananas ripen, their fructose (sugar) content increases, making them sweeter and a great alternative to sugar in baked goods. Go to the recipe card for the step-by-step process!
