This roasted pork tenderloin recipe is the perfect easy weeknight meal. It only takes 25 minutes and it’s always a hit!

I have found that 400ºF is the best temperature for cooking pork tenderloin. It’s hot enough to brown on top, but not so hot that it burns before it’s soft and juicy on the inside.

Mine usually takes forever to bake for 15-20 minutes, but it depends on the thickness of the lomos you use. The best way to know when they’re done is to use a meat thermometer. Check at 15 and increase time as needed until 140ºF is reached.

You will cook the roast pork tenderloin at 350F. It takes about an hour to cook a two-pound tenderloin at this temperature. If your tenderloin is a different size, you’ll want to plan for a cooking time of 25-30 minutes per pound.

You know it’s fully cooked when the internal temperature is 145F. At that temperature, it’s medium rare, but it will continue to cook as it sits for 15 minutes before serving. At an internal temperature of 165F, it will be cooked. Meat thermometer for checking the internal temperature of pork.

A common problem with pork is shrinkage, especially when cooking. This indicates that the pork lost moisture in the heat of the oven. After an hour of cooking, the pork will be a little dry.

The only downside to covering the pork is that it doesn’t form the brown crust that happens when uncovered in the oven. To fix this, I recommend searing it on the stove before putting it in the oven. This step is not required, but will improve the tenderloin’s flavor and appearance.

Leftover pork tenderloin will keep for 3 to 4 days in the refrigerator/freezer in an airtight container. When heating, make sure to only heat until the pork is hot, as pork can dry out very easily.
