A few months ago, I started using other flours in my cooking. It started when my mom gave me a bag of almond flour and as someone who hates throwing away food, I used it on anything and everything. After finishing two bags, I realized that I use almond flour better than other flours.

My favorite uses for almond flour are desserts and baked goods. Unlike other white flours, almonds are very similar to white flour or wheat, making them very easy to use in recipes. One mf I like to use with almond flour is banana. It’s a great combination that works together. So far I’ve used it to make quick bread and some fluffy pancakes, and now, it’s time to make muffins!
I’ve been wanting to share an almond banana muffin recipe for a long time. They really used my overripe bananas and I love how big and good they are. They also use simple ingredients and only use the dishwasher or blender to make them.
There is no refined sugar and flour, but you will not say. The texture is moist, fluffy, and the crumb is light. It’s sweet and savory, like good banana bread, without any almond flavor at all.
I had two friends go for coffee the other day and were given a muffin and they couldn’t believe it was gluten free and paleo- They thought it had to be made with wheat!
Healthy Banana Muffins Recipe
Start by combining your dry ingredients in a large mixing bowl. Next, put the rest of the ingredients in a food processor or food processor and pulse until the texture is firm. Add the dry ingredients in and pulse once more to combine.
Now, divide the dough between greased 12-count muffin tins. Bake for 17-20 minutes, until a skewer comes out clean. Allow the muffins to cool in the tin before removing.

You inspired me to make this recipe and perfect the banana almond muffin recipe.
As you can see, these muffins are the perfect accompaniment to my almond flour banana bread. A lot of people on Instagram are making bread into muffins, and I think it’s time for muffins to get their glory.
And the first time the recipe turns to muffins, I like to double check the ratio of ingredients needed to get all the muffin tops and the quality of the muffins.
Easy Almond Flour Banana Muffins
So I changed the recipe a little so that you can get full and beautiful muffins with this recipe.
Mix dry ingredients and set aside. I do this by mixing the baking soda and tapioca powder into the almond flour.
In a large bowl, combine eggs, oil, vanilla and mashed banana. Bananas must be mashed very well before blending.
Carefully divide the batter into 12-cup muffin pans, (I used muffin liners but you can spray them with oil) about 3/4 of the way, and bake for 20- 25 minutes.

I do it three times a week, and I think I’ll plant a banana plant in my back yard for this purpose.
