These banana muffins have become our favorite muffin recipe that uses whole ingredients and provides us with protein, fiber, and acceptable amounts of carbohydrates.

If you’re trying to eat a little healthier, you know it takes a lot of preparation and planning. I love this banana muffin recipe because there’s no prep and it’s super easy to clean up. (You only end up dirtying the bowl and the muffin tin.)

Easy Almond Flour Banana Bread (perfected Recipe!)
No, they are not exactly the same. Almond flour is slightly finer than almond flour. However, you can use them interchangeably for this recipe. Just expect a slightly different texture.
Yes, we always freeze it! Let them cool to room temperature and then store in a freezer bag. I freeze them for up to 1 month, because that’s how quickly we go through them. After 1 month they can taste the freezer.
Add chocolate chips (dark chocolate chips for the diehards), walnuts, or other nuts to the muffin batter for more variation!
My favorite way to store muffins is in an airtight container at room temperature. Line the bottom of the container with paper towels, place the muffins in a single layer and top with another paper towel. This helps keep the moisture out of the muffins to help them retain their texture the next day.

Muffins should keep at room temperature for up to 3 days. I don’t recommend keeping them in the refrigerator because they dry out. For longer storage, freeze for up to 1 month.

These have all the flavor of traditional banana muffins, but made with almond flour and sweetened with overripe bananas. The recipe makes 6 because this is a small batch of muffins, but it can easily be doubled to make 12. Almond Flour Banana Muffins Almond Flour Banana Muffins are in your kitchen, even if you think you already have too many banana muffins or banana bread. Recipes, trust me! We always need more ways to use bananas. They are naturally sweet, nutritious and kids love them. Plus, they make a great breakfast or snack. So how about having chocolate chips for breakfast – that’s our life! I make almond flour banana muffins on the weekend. I love that almond flour has more protein than regular flour and I like to switch it up when feeding my kids. Yes, the kids stopped after one bite, because they realized in a split second that these were not my usual chocolate chip banana muffins. I’m happy to report that the break didn’t last long and they continued to eat with smiles on their faces! Once the muffin plate was gone, which didn’t take long since the recipe only makes 6 muffins, he immediately asked if we could make my Endless Banana Bread at lunchtime. Banana Muffins Almond Flour Ingredients: A ripe brown-spotted banana Corn Sugar Neutral oil: A neutral oil is any unflavored oil, such as canola, vegetable, or grapeseed oil. Olive oil and coconut oil have a strong flavor for these muffins. Vanilla Extract One Whole Egg Almond Flour: First we need to discuss how almond flour differs from almond flour. So almond flour is made from blanched almonds (from which the skin has been removed) and then ground into a fine powder. The meal is only ground almonds, with the skin; I recommend almond flour for the lightest and fluffiest muffins. Baking soda Baking powder Salt Ground cinnamon Chocolate chips: Chunky chips are best here, but you can use milk chocolate chips if you prefer. How to Make Almond Flour Banana Muffins: Preheat oven to 350 and line 6 muffin cups with liners. Mash: Mash the overripe bananas with a fork in a large bowl. Puree well until only a few lumps remain. Stir in all remaining ingredients except chocolate chips: 2 tablespoons granulated sugar, 2 tablespoons oil, one whole egg, ½ teaspoon vanilla extract, 1 cup almond flour, ½ teaspoon baking soda, ¼ teaspoon baking powder, ¼ teaspoon. Salt and cinnamon. Note: This mixture can be mixed very well because almond flour does not contain gluten. There is no risk of over-mixing and the muffins will become tough. Stir in ⅓ cup chocolate chips and divide mixture among 6 muffin cups. Bake at 350 for 20-22 minutes. Let cool: Remove the muffins from the oven, let them rest in the pan for 5 minutes. Then use a spatula to transfer them to a wire rack to cool completely. When these almond flour banana muffins are hot from the oven, they can be a little soft and moist inside, so let them cool as much as possible before eating. I still can’t stand hot muffins out of the oven! To keep these beautifully moist banana muffins, let them cool completely, then place them in an airtight container on the counter. They will keep at room temperature for 2 days. You can wrap them in plastic and freeze them individually, so you can have a quick breakfast on the go. Can You Make These Almond Flour Muffins Vegan? Or without eggs? To make these almond flour banana muffins without eggs, you can substitute 2 tablespoons of apple juice. This makes the muffins vegan, but as long as you use vegan chocolate chips. To find vegan chocolate chips, look for dark chocolate chips and read the label to make sure they don’t contain milk. We always use Trader Joe’s Semi-Sweet Chocolate Chips because they are vegan. What if you have 2 bananas? Can you make these Almond Flour Banana Muffins with 2 bananas? This recipe, as written, calls for one large banana. You can use two smaller bananas, or you can double the recipe and use 2 bananas. Where to get almond flour? Almond flour can be expensive, but I say it’s worth it for the nutritional benefits – so much vitamin E and protein! I buy it online or use the bulk bins at my local health food store and get the best price on it, usually less than $8/pound. You only need one cup for this recipe! Is this recipe Whole30?
