French Velouté soup starts like many other vegetable soups – by gently boiling the vegetables in a light soup, then pureeing them together. Now, what really sets Velouté soup apart is that it is then enriched with a mixture of butter and flour. The roux paste mixed with the vegetable mixture thickens the soup and gives it a special velvety color. With the presence of oil, it gives the soup a richer, smoother taste.
