Cocktail Recipes Egg White – This tart and frothy drink, topped with egg whites, was made famous again thanks to Leonardo DiCaprio’s character in Hollywood’s Once Upon a Time.

At home we have a lot of debate about cocktails made with egg whites. Nancy’s grandfather was a famous bartender who wrote a drinking guide in 1914. In fact, I used his book to research drinks, and it appears in some of our drink photos. The first time we read it we noticed that many drink recipes contain egg whites. Nancy thought that was bad. I can’t agree at all.

The last time I seriously thought about drinking raw eggs was when I watched Sylvester Stallone do it.

So it was with some trepidation one night when, at our speakeasy, the bartender served me a drink made with egg whites. To my surprise, it was very tasty. Besides giving it more texture and flavor, it looks bubbly and delicious. Now I am a believer!

Which brings us to the Whiskey Sour. This drink came out during the American Civil War, and has fallen in popularity many times since. I was recently reminded of this classic while watching one of the coolest films about the late mid-century era,

. The main character, Rick Dalton, shakes up one of his bars at home – including egg whites – and pours it into an ornate beer stein to drink while learning his lines while floating in his pool. The only problem comes when, the next morning, he cries there are eight of them!

There are a few different ways to make a drink with egg whites. When using a cocktail shaker, you can mix it “wet” or “dry,” meaning with or without ice. You can always wet it, strain it, remove the ice and shake it again. You’re shaking to make sure you get the egg mixed with the other ingredients to form that smooth, creamy topping. Or you can mix the egg white separately with a whisk until it’s nice and thick to give your drink a frosty look.

This is a classic recipe that contains the holy trinity of bartending: spirits, sugar, citrus. You must have:

The risk is apparently low and here in the US it is safe. Many of the eggs we use in cooking are pasteurized and most chickens have been vaccinated against Salmonella. However, like anything in life it is safe!

First of all, there must be a good reason why egg whites are used in cocktails – otherwise, why bother? In short: yes, there is a very good reason. They add a rich, silky texture and body to cocktails and also work to calm intense flavors. That’s why you often see them in drinks “back”, because they help calm the acid bite of citrus.

Our test cocktail was a Pisco Sour, and we made one with one without egg whites to compare results.

The beautiful white foam on top of the drink can also be a canvas to “draw” bitters or spray stencil images.

The cocktail was OK, but not very balanced. Citrus has a strong bite and should be reduced (or added sweetener) to balance the drink.

The protein in the egg white balances the citrus. This reduces the sharpness of the citrus and the smoothness of the drink on the palate.

Regardless of their delicious texture and flavor, there is another reason to consider adding egg whites to your cocktails: they create a beautiful white palate for a whole world of garnish options.

Now that I’ve convinced you it’s worth a try, how do you actually put egg whites in your drinks? There are a few things you will definitely want to keep in mind:

To get a good foam with egg whites, you need to shake differently than usual. You’ll often see bartenders “dry shake” (shake the drink without ice) first, then add ice and shake again. This double-beating method gives the egg whites more time to beat to develop their signature velvety texture.

Lately, I’ve seen a number of bartenders take a slight variation on this method – the “Reverse Dry Shake” – where you shake the drink first, then strain and shake again “dry” without the ice. The result? Supposedly a better, better drink. In our experience, there is no “best” method – just different results. A traditional “dry shake” gives a more velvety, thick and smooth texture, while a reverse dry shake gives you a larger foam made of larger bubbles. Neither is better – it just depends on your preferences and what you are looking for in a drink.

On the other hand, another technique we use to help create foam is to add one of these to the shaker. It speeds up the process, but it will definitely make your swing faster (and kind of sound springy.) So it may not be suitable for every bar…but it will definitely make your swing faster!

Don’t worry, I haven’t forgotten your mother’s worries. He was right – after all,   an egg white cocktail has never seen a frying pan and is definitely best served raw. So how can it be safe? The short answer is, using raw egg whites is a risk. Like eating steak tartare or eggs Benedict, any undercooked meal carries some risk. But by carefully making sure you are working with fresh, clean eggs, you can reduce the risk.

By the way: this should go without saying, but remember that you should always let your customers know when raw eggs are present. They may not think to inform you of an allergy or other condition that prevents them from safely enjoying raw egg whites. There are many ways to do this – from clearly mentioning it on the drink menu to just asking the customer when they ordered.

You may also have legal obligations: depending on your local health department, you may also be required to inform them of the potential health risks of consuming raw eggs. To be sure, check with your local health department or your restaurant chef, who may also know.

One last consideration: if you are the type of person who likes to drink cocktails slowly with a meal, or generally take your time…. Egg white cocktails may not be your best choice. When they are cold, they are very tasty. But as they warmed to room temperature, the white cocktails began to smell … well, eggy. This is not very interesting.

Help avoid this problem by infusing your egg whites with citrus oil and rimming the glass with citrus peel. The aromas added to the oil will overpower the smell of the egg for a longer time and buy you some precious time!
