Bake for 1 hour 15 minutes to 1 hour 30 minutes, the center of the cheesecake should move slightly. You can use an instant-read thermometer to see if the internal temperature has reached 150F-155F or 65C-68C. Turn off the oven and let cool in the oven for 1 hour, then remove from the tin and let cool on the wire rack for 1 hour.

Finally, wrap in cling film and refrigerate overnight or at least 6 hours. This is crucial, don’t skip cooling time!!!

When pouring the cheesecake batter into the springform pan, tap the springform pan on the counter to release any air bubbles. Bake the cheesecake in a bain-marie for more even heat. Don’t open the oven door while the cheesecake is baking, you want all the hot air to be in the oven until you turn the oven off. Allow time to refrigerate the cheesecake according to the instructions below.

Take the cling film and wrap it around the springform pan, making sure it goes up the sides of the pan. Make sure there are no rips or tears in the foil and place the baking sheet on a larger baking sheet or baking sheet.
