Fried rice can be almost anything—usually a combination of vegetables, a beaten egg, and a protein like the shrimp we use in this recipe, or chicken, fish, or tofu.

This shrimp fried rice recipe comes from my dear friend Jaden at She learned how to make the best fried rice from her mom (after a pretty hilarious fail when she was a teenager). It’s super easy and comes together in less than half an hour.

Be sure to use leftover day-old rice when making fried rice. Freshly prepared rice results in fried rice that is mushy.

You can serve it as a side dish when you have a lot of other dishes on the table. But for me, a big bowl of shrimp fried rice is quite satisfying on its own (yes, it’s that good). So the next time you’re craving some home-cooked Asian food, know that this recipe always comes in handy!

There are many ways to make fried rice, with different recipes using grilled pork, Chinese sausage, chicken, or even diced mussels. But the classic base is a combination of rice, eggs, vegetables and a few other salty ingredients. So here’s my take on using shrimp as your main protein.

In general, fresh catches of the day are best in terms of quality. However, they can often be expensive and not everyone lives near the coast. So I’m all for picking up a bag of wild frozen shrimp for this recipe.

In any case, look for medium-sized shrimp that are peeled, deveined, and with the tails removed. The more ready they are, the easier (and faster) this shrimp rice will be to make!

Instant Pot Shrimp Fried Rice

This recipe is quick to make, so make sure you have all the ingredients ready and ready to go!

Prepare and cook the shrimp. First, toss the shrimp in a bowl with salt and pepper. Then we move on to cooking. Heat some avocado oil in a wok or pan and add the shrimp in a single layer. Fry for 1 to 2 minutes, then 30 seconds on the other side. Transfer the shrimp to a plate.

Boil the vegetables. Sauté the onion, white parts of the spring onion, garlic and ginger until fragrant. Then add the frozen carrots and peas and sauté until heated through, 1 to 2 minutes.

Boil the eggs and fry everything together. Push the vegetables, quickly beat the beaten eggs until soft, then mix the eggs with the vegetables. Add the rice, shrimp, soy sauce and sesame oil to the pan and stir-fry until well combined. At the end, stir in the spring onion.
