Don’t be disappointed with the salmon selection! Here are a few ways to help you choose the best salmon at the grocery store.
One size salmon fillets are best for grilling – 5 or 6 ounces is about the right size. Grilling a large piece of salmon is difficult unless you put it on something, because it is almost impossible to turn it and you risk breaking it. Besides, one person’s fillets eat more people equally.
If you leave the skin on while cooking, the salmon will have more flavor (you can remove it later if you don’t want to eat the skin). Also, the skin helps hold the salmon together so the salmon doesn’t fall off the grill or break easily.
The best salmon is firm, fresh and bright red-orange in color. To measure the firmness, gently pull the fillet with your finger: the salmon should be back and you should not see the left finger.
Grilled Salmon With Creamy Cucumber Dill Salad
This is up to you. Wild-caught fish is low in calories and saturated fat, and has low levels of bacteria and pollution [*]. On the other hand, some people like the mild taste of salmon.
I find that the best way to season salmon for grilling is to marinate it. It is very easy and prevents the salmon from drying out.

Grilled salmon is best cooked over medium-high heat, which is a temperature between about 400 to 425 degrees F.
Salmon grill time will vary depending on the size and thickness of your fillets, but a general rule of thumb is 6-8 minutes skin-on, followed by 2-5 minutes skin-on.
A good recommendation for fish is that it is done when it flakes easily with a fork, but it is also easy to overcook this way. For best results, use a meat thermometer to ensure the salmon is cooked perfectly and check the temperature every few minutes after flipping:
Let the salmon rest for 3-5 minutes before eating, as the temperature increases by 3-5 degrees during rest.

If you don’t have a meat thermometer, however, you can use my time estimate above and poke the edge of the fish with a fork to measure doneness.
Marinating fish or meat for too long causes the meat and meat to break down and become mushy. 30 minutes is a good amount of time.
It may be intuitive to coat your jewelry with oil, but it is not necessary and is more beneficial to have yourself.
The salmon marinade I use has a lot of oil and is perfect for this purpose, but if you are not marinating, remember to coat your fish generously with oil before grilling.

Cooking salmon skin side down has many benefits. The skin protects the meat more from high heat, crisps better than direct heat most of the time, and is easier to turn without sticking.
Tip: Turn your salmon only in the last 1-2 minutes of baking. It should be 70-80% before turning.

Keep the lid on to generate heat (like an oven!), so your fish can cook evenly.
Because fish can be messy, use a fish spatula like this one to turn. This device is thin enough that it can be placed between the layers of fragile fish and the grill without tearing the fish, and large enough to hold your entire salmon fillet on it.
If you grill salmon without marinating, make sure you oil the salmon well (so it doesn’t stick to the grill) and season with salt and pepper before grilling.
Grill skin side until done 70-80%, then skin side for a few minutes. This method allows the skin to crisp up and makes flipping the salmon easier without tearing or sticking.
Easy Grilled Salmon With Cajun Seasoning
Cooking frozen salmon is not recommended, because the meat and frozen fish are not balanced so you can end up with some raw and slightly overcooked meat.
It is quite quick and easy to thaw salmon fillets in a bowl of water, or you can do it in the fridge overnight. Do not soak the salmon in the marinade.
