Many foods are cooked over live fire. “It almost had this barbecue feel, if Greek food was barbecue: meat off the spit and lots of sides with it. Good rustic sourdough bread was everywhere.” There were also slow-cooked dishes that were braised overnight in clay pots. The fish was completely fresh water. There was plenty of green and beetroot and fodder mushrooms. The milky, ricotta-like cheese galottiri was on almost every table… And there are pies like alevropita, made from a thin dough loaded with butter, similar to pizza but minus the tomatoes.”The pies were eye-opening,” says Pelli.
All of this will inform Bar Vlaha’s homely, rustic menu, with a wine list chosen entirely from central Greece. The restaurant will also feel homely. “It feels like you’re in someone’s home in the village, and it’s going to be that style of cooking: honest, good food with a lot of heart, a lot of soul, a lot of love,” says Pelli.
