The good news: You don’t need the most expensive ground beef to make a tender beef roast. (Top sirloin is our favorite beef for non-roasts because it’s relatively inexpensive and produces juicy results). These are generally the best cuts of beef for stir-fry:

Steak Stir Fry Recipe: How To Make It
1. Mix 3 tablespoons barbecue sauce, 3 tablespoons real maple syrup, and 2 tablespoons soy sauce. to set aside.
2. Heat a large heavy skillet or wok over high heat with 1 tablespoon oil. Add the thinly sliced meat in a single layer to the hot pan and fry undisturbed for 2-3 minutes. Stir fry for 2 minutes or until almost cooked. Add some salt and pepper, add ginger and garlic and saute for 1 minute.
3. Drizzle beef with sauce to taste (I added 5 tablespoons) and stir-fry for another 1 minute or until cooked through. Remove meat to a plate and cover to keep warm. Wipe the pan with a damp paper towel.
4. Put the same pan on high heat and add 1 tbsp of oil. When hot, add the mushrooms, season with a little salt and pepper, and sauté until golden brown (5 minutes), then remove the mushrooms to the dish with the beef.

5. Add 1 tablespoon of oil, chopped onions and vegetables and saute for 8 minutes or until soft and brown.
6. Add vegetables to beef and mushrooms, add more sauce to taste (I added 2 more spoons) and sauté until heated through.
Since you are cooking at high heat, use oil with a high smoke point. Our favorite is extra-light olive oil (we use it for everything from baking to stir-fries because it’s neutral in flavor and has a high smoke point). Other good options are: canola oil, grape seed oil, avocado oil, or peanut oil.
