Season the salmon fillet with salt and pepper and grill on medium heat for about 5 minutes per side on medium high. Serve each salmon fillet topped with a slice of basil butter. You know what else I love about broiling salmon instead of cooking it on the stove? You can make as many portions as you need at the same time, either 2 or 22, they all fit on the baking sheet and are ready in 12-14 minutes. Fry the salmon while you quickly chop the tomatoes and herbs. You don’t have to stand by the stove getting splashed with oil and trying to guess when it’s time to turn it.
I use this method all the time and change up the flavor by using different toppings, like making a creamy yogurt dill sauce or a lemon butter sauce with shallots and fresh herbs.
If you use this method to preheat the oven to 500 degrees Fahrenheit, which is REALLY hot, I know you might get nervous. Do not worry. This is only for preheating the oven. This initial heat helps make the baking sheet scalding hot, just like preheating a skillet when cooking on the stove before eating. The high heat helps crisp the outside and helps sear the salmon skin and render the fat.
Immediately lower the temperature in the oven to 250 degrees. The salmon continues to cook very gently, so it stays really juicy and retains moisture while it’s being cooked.

No. Save yourself the job. But that’s just a side benefit. The main reason is that the salmon skin helps keep the salmon much juicier when you roast it with the skin on. It comes out easily when you are done with it.
If you like a crispy salmon skin, there is also a beautiful lake and you can enjoy it with your fish. If you have a baking sheet of good quality, the skin also comes off easily. Be sure to remove the scales beforehand, coat the salmon generously with oil on the bottom so it doesn’t stick to the baking sheet. Use a thin metal spatula to remove the salmon from the baking sheet.

TIP: If you have time, let the salmon fillets come to room temperature on the plate first. This helps them cook more evenly.

For baked salmon oven temperature, I recommend 400 degrees F, as this high temperature cooks the fish quickly without drying it out. And for perfect salmon, you want to check the internal temperature with an instant-read thermometer inserted into the thickest part of the salmon, rather than just testing if the fish flakes with a fork. Here’s a temperature guide to know when it’s done to your liking:
They will take longer to cook, but use your instant meat thermometer to determine when they are done. I recommend covering with foil and baking for 15 minutes, then remove and cook for another 5-10 minutes, checking the internal temperature after 5 minutes (20 minutes total cooking time).

My baby, who really isn’t a baby anymore, loves fish! Especially salmon. She will eat a whole fillet! At one point I actually thought about sharing my salmon with her instead of making her an individual piece. She ate the whole thing.
