The origin of sushi cooking is a bit of a mystery. Mimi Qiu Reyes is credited by some with being the founder of The Original Baked California Roll, which was launched in the Philippines in 2015. While others say the idea of cooking sushi in a pan was popular during the luau dinners years ago. Anyway, I think it’s pretty cool that recipes can spread and grow, and people all over the world can connect through it.
Asian Baked Salmon With Veggie Fried Rice
There are many different versions of grilled sushi, and different people prepare it in different ways. There are no rules, so just include whatever you want. But I would say the main ingredients are seafood, rice, Japanese mayonnaise (Kewpie) and cream cheese. The recipe I share here uses salmon as the main seafood. I also like to add some unagi paste for sweet, salty, and umami. As a side, I served it with grilled seaweed, spicy mayonnaise, eel sauce, avocado and cucumber.
What seafood can I use? Be honest, what do you like! I recommend the salmon, imitation crab, shrimp, scallops and canned tuna (Korean brand not American). You can also eat it raw, just be sure to use sushi-grade fish.
Can this be served cold? I prefer it hot because the combination of mayonnaise and cream cheese is comforting and gooey. However, it is acceptable to eat cold. I just make sure the rice is fresh and not cold hard rice from the fridge. I think the cold version is best served with fake crab or raw fish.
Can you do it without mayo/cream cheese? You can omit the mayonnaise and add extra cream cheese or vice versa to retain all the creaminess. I wouldn’t leave out both because I think the creaminess is what makes baked sushi.

What can I substitute sriracha with? If you don’t like the spiciness, you can leave it out completely. Alternatively, you can swap it out for your favorite chili paste/hot sauce. If you want Korean flare, I suggest gochujang, Indonesian chili paste sambal, and chili garlic paste.
How to reheat? If I have leftovers, I usually put it in the fridge and reheat it in the microwave. It is generally good as a rest for a few days.
My favorite way to eat grilled sushi is small hand rolls. Take a sheet of grilled seaweed paper and place the cooked sushi on it and finish with the cucumber and avocado. Then I fold it like a taco and enjoy! Another fun way to eat it is to use cucumber slices like potato chips and lay them on top to grill the sushi. If you like it spicier, it can be topped with extra eel sauce, chili mayonnaise, and Sriracha sauce. You can also take a piece of grilled seaweed, place it on a sushi griddle and pick up a piece with your chopsticks. It’s delicious no matter how you eat it! But this Salmon Sushi Bake is a great option when we want the taste of sushi without having to make individual rolls for each person. Easy Homemade Baked Sushi Recipe

You can use Kewpie mayonnaise if you like, but I like the clean ingredients of avocado oil mayonnaise.
Did you know that Kewpie mayonnaise contains soybean and/or canola oil, lots of sugar and MSG? Although it tastes good, I try to avoid cooking it at home for health reasons. Avocado oil mayonnaise is a great option!
