My parents officially separated or officially tried to start divorce proceedings at the beginning of my sophomore year of high school. I remember that they talked about it with us.

It was not surprising at the time. As kids we saw the writing on the wall – our parents (while devoted) lived apart for years due to work and both wanted to keep us in the same area. A good school without interfering with our daily lives.

What I never expected to come out of this time, despite the hardships, were the wonderful memories I had with my mom.
My sisters were younger, so they spoke less on purpose. So every Sunday they were with my dad and that meant I would spend that day alone with my mom.
Mom always did special things on Sundays. Mainly because she worked a ridiculous schedule during the week and after sleeping in on Saturday morning – she managed to get her work done on Sunday.
We were regularly treated to her ugly omelets for lunch after church. Or we would come home to a smorgasbord.

Mom would literally let us slice up all the lunch meats and deli cheeses in the fridge and pile them up on the kitchen table.
It was very exciting. Especially since we can use whatever we want to create our own sandwiches. If it was on the table, it was not unlimited.
Then came the Sundays when my little sisters couldn’t be there anymore. “Smorgasbords” were no longer fun.
We decided to make the most of it. My mom and I ended up creating a new tradition – Sunday Suppers.

Basically, this meant that every Sunday evening we would plan a delicious meal that would be enjoyed by my mother and only my mother.
After all, my younger sisters were easily distracted by things like salmon fillets, crab cakes, rare steaks, and even this recipe for Lemon Baked Salmon.
I wish my sisters were there, but they didn’t have what we were eating.
I will always cherish the memories I made with my mom – especially this Lemon Pepper Butter Salmon.
Lemon Pepper Salmon In The Air Fryer
I wonder if I have experienced anything else. It was a great invention, almost an “accident” by my mother at the last minute.
One of her restaurants had salmon, so she bought some at the grocery store on a whim and then had to use it.
Our ingredient was pepper, so it was a real challenge for us to use in an experimental recipe. Oil? Well, I’m not sure how my mom knew it was better than, say, olive oil? But she did!
While my mom uses recipes, I don’t think she ever needs anything to make something really tasty.
Baked Lemon Pepper Salmon With Brussels Sprouts
It is a healthy, high-quality protein rich in Omega-3 fatty acids, B vitamins and potassium. Studies have shown that it can help reduce inflammation, can help with weight control, and can even reduce the risk of heart disease.
There’s really no reason not to eat or enjoy this special fish, especially when it’s this good.
Boneless, skinless salmon fillets are seasoned and generously seasoned with lemon pepper. Sprinkled with pieces of butter, they are baked in the oven to tender juicy perfection.
Sprinkled with freshly picked parsley and served with sides of steamed broccoli and wild rice – it’s a delightful dinner plate.

Who agrees that salmon is the best fish? It cooks very quickly, has a nice mild flavor without being fishy, and is very easy to find at the grocery store. Plus, just look at that amazing pink flesh! You don’t need a lot of effort and time to make salmon taste amazing.

If you want to be sure that your salmon is cooked, you can take a knife and make a small cut to make sure that the fish is light pink all the way through.
You can also read an instant thermometer. The salmon should be 145 F in the deepest part.
This salmon tastes great with the added layer of tobacco. You can grill anything on a sheet pan! Keep the fire on medium heat and follow the instructions exactly as written with the barbecue lid closed. You can also use foil on the grill instead of a sheet pan.
I do not recommend placing the fish directly on the grill bars. Salmon is delicate and falls apart easily. We also don’t want to miss out on this amazing sauce!

Store leftover salmon in an airtight container in the refrigerator for up to 3 days. You can heat in 30 second intervals in the microwave or 450F in the oven for 5-7 minutes.
If you choose to freeze your leftovers, they will last 4-6 months. It’s best to thaw your salmon overnight in the refrigerator before reheating.
Want to know my favorite part about the rest of these things? Of course, they don’t need to be reheated! You can peel the salmon and enjoy it on top of a cold salad or mix it with mayo, onions, herbs, salt and pepper and enjoy it as a salmon salad on its own or in a sandwich.
